Product Overview

The Winco TMT-CDF2 Candy and Deep Fryer Thermometer is a high-precision, heavy-duty mechanical monitoring tool engineered to withstand the extreme temperatures of sugar work and boiling oil. Achieving the perfect consistency in candy making—such as soft-ball, hard-crack, or caramel stages—and ensuring crispy, non-greasy fried foods requires absolute temperature accuracy. The TMT-CDF2 provides kitchen operators with a dependable, real-time readout, making it an essential smallware instrument for bakeries, pastry stations, donut shops, and busy hot lines.

Constructed from premium commercial-grade stainless steel, this durable thermometer features a 2-inch dial facepaired with a robust 5-inch immersion probe. It reads an expanded, dual-scale temperature range from 100°F to 500°F (40°C to 260°C), allowing cooks to safely track low-temp oil frying up to high-heat sugar boiling. Equipped with an integrated vessel clip, the thermometer anchors securely onto the side of stockpots, copper candy kettles, and countertop deep fryers, keeping the probe safely submerged and suspended above the bottom of the pan for an uncompromised, ambient reading.

Key Features

  • Dual-Scale Extreme Heat Dial: Tracks temperatures flawlessly from 100°F to 500°F (40°C to 260°C), cleanly covering the exact thresholds required for high-sugar confectionery work and intensive deep-frying.

  • Adjustable Target Indicator: Features a sliding red target marker on the outer rim of the 2-inch display that can be manually aligned to your recipe's target temperature for quick, at-a-glance monitoring.

  • Heavy-Duty Vessel Pot Clip: The built-in stainless steel spring clip slides smoothly along the 5-inch probe shaft, anchoring firmly to pot rims to keep your hands completely free while cooking.

  • Fully Calibratable Design: Equipped with a bottom hex calibration nut, allowing culinary staff to field-calibrate the dial face using a simple ice-water bath to guarantee consistent, long-term accuracy.

  • Durable Stainless Steel Architecture: Built entirely from commercial-grade steel to resist rust, chemical degradation, and clouding when exposed to boiling water, hot oils, and intense kitchen humidity.

  • Battery-Free Mechanical Response: Utilizes a highly sensitive bimetallic coil mechanism that instantly registers heat changes without the vulnerability of electronic screen burn or dead batteries.

Calibration Instructions

To ensure absolute accuracy, perform a cold-bath calibration routine periodically:

  1. Prepare a Cold Bath: Fill a cup with crushed ice, top it off with cold water, and stir vigorously for 30 seconds to equalize the environment.

  2. Submerge the Probe: Insert the 5-inch probe into the center of the cup at least 1" deep. Hold it steady for 15 seconds or until the temperature needle stabilizes. Do not let the probe tip touch the bottom or sides of the container.

  3. Verify and Adjust: If the needle rests exactly at 32°F (0°C), no adjustment is required. If it deviates, use pliers to gently turn the calibration hex nut located on the underside of the dial head until the pointer aligns perfectly with the 32°F (0°C) mark.
